Bean & Barley Soup                                         Serves 4

Bean & Barley Soup

Ingredients

  • 2 Cups Assorted Beans (White/Red Kidney, Lima, Pinto, Mung, etc.)
  • 1/2 Cup Green Split Peas
  • 1/2 Cup Brown or Green Lentils
  • 1/2 Cup Barley
  • 1 Onion diced
  • 1.5 Cups Canned Tomatoes chopped
  • 1 Red Pepper
  • 1 Lemon juiced
  • Salt & Pepper

Preparation

  1. Soak all beans, lentils, peas and barley overnight.
  2. Drain and pressure cook for 90mins(2hrs with tight lidded pot).
  3. Add onions, tomatoes, pepper, lemon juice, salt, peper - simmer for 30mins.
  4. Leftover soup can be frozen.
