- Cook 1/2 day ahead in order for spices to develop.
- Soften butter in a large pot.
- Saute onions and garlic until soft.
- Add sweet potato, carrots, chicken broth, curry, garam masala, salt & pepper. Simmer for 45mins or until vegetables are very soft.
- Puree until smooth.
- Adjust seasoning to taste.
- Add white wine.
*Garam Masala is an Indian spice mixture similar to curry powder.
