Onion & Smoked Mussel Soup Serves 4
Ingredients
3 Lrg Onions sliced
2 Tbsp Butter
2 Cups Dry White Wine
2 Cups Chicken Broth
1/2 Tsp Chili Flakes
1 Can Smoked Mussels
Salt & Pepper
Sour Cream (optional)
Toast
Preparation
Soften butter in a large pot.
Saute onions until soft.
Add wine, broth, salt & pepper - simmer for 15mins.
Add mussels - simmer (do not boil).
Add a spoonful of sour cream to each bowl (optional).
