Beef Tongue with Spicy Mustard Sauce Serves 4
This recipe requires more time to prepare, however you will be rewarded with very tender meat and a delicious sauce.
Ingredients
1Lrg Beef Tongue
6 Slices of Bacon
1 Tin of Anchovies
500ml Cream (half&half or Whipping)
5Tbsp Dijon Mustard
1Tbsp Corn Starch
Salt & Pepper
Preparation
Wash and cook the tongue in a large pot well covered with water for 2.5-3 hrs.
Cool the tongue and peel the skin off.
Wrap the tongue in bacon and put anchovies on the tongue.
Place the tongue in a baking dish coated with oil.
Roast the tongue for 45min-1hr (375F), basting regularly.
When the tongue is roasted prepare mustard sauce.
Place cream in a pot and add corn starch, salt & pepper.
Bring the cream to boil and simmer for 2min.
When the sauce is cooked add Dijon mustard.
Slice tongue and serve with mustard sauce, root vegetable puree and steamed vegetables.
