Beef Tongue with Spicy Mustard Sauce         Serves 4

Beef Tongue with Spicy Mustard Sauce

This recipe requires more time to prepare, however you will be rewarded with very tender meat and a delicious sauce.

Ingredients

  • 1Lrg Beef Tongue
  • 6 Slices of Bacon
  • 1 Tin of Anchovies
  • 500ml Cream (half&half or Whipping)
  • 5Tbsp Dijon Mustard
  • 1Tbsp Corn Starch
  • Salt & Pepper

Preparation

  1. Wash and cook the tongue in a large pot well covered with water for 2.5-3 hrs.
  2. Cool the tongue and peel the skin off.
  3. Wrap the tongue in bacon and put anchovies on the tongue.
  4. Place the tongue in a baking dish coated with oil.
  5. Roast the tongue for 45min-1hr (375F), basting regularly.
  6. When the tongue is roasted prepare mustard sauce.
  7. Place cream in a pot and add corn starch, salt & pepper.
  8. Bring the cream to boil and simmer for 2min.
  9. When the sauce is cooked add Dijon mustard.
  10. Slice tongue and serve with mustard sauce, root vegetable puree and steamed vegetables.
