Cauliflower & Millet Puree Serves 8
This recipe is easy to make and is very fluffy. Serve with any meat or vegetable side dish!
Ingredients:
Olive Oil
1 Small Onion chopped
1 Carrot chopped
1 Large Cauliflower cut in pieces
1.5C Millet
3.5C Water
Salt
Preparartion:
Pour oil in to a pressure cooker.
Fry chopped onions until soft (translucent).
Add carrot, cauliflower, millet, water and salt.
Close the pressure cooker and cook for 1 hour.
If you do not have a pressure cooker - cook for 1 hour 15 mins in a pot with a tight lid; you might want to increase water to 4 Cups.
Open the pressure cooker and mix the mass to create a fluffy puree.
You can add herbs or spicy oil to add more creaminess and flavour.
