Oxtail Stew                                                        Serves 4

Oxtail & Rice

This recipe can be used wtih beef stewing meat as well. You’ll find that the oxtail is more delicate than regular beef. Prepare this recipe in a crockpot or a large pot with a thick bottom and tight lid - preferrably cast iron. The advantage of using this pot is after you brown the meat, you can add the additional ingredients and cook for the remaining time.

Ingredients

  • 1 Oxtail cut up
  • Flour (for dredging)
  • Oil
  • 1 Bottle Red Wine
  • 1 Lrg Cooking Onion chopped
  • 2 Carrots chopped
  • 1 Turnip or 1/2 Rutabaga chopped
  • 1 Parsnip chopped
  • 2 Bay Leaves
  • Salt & Pepper

Preparation

  1. Combine oxtail with flour, shake off excess.
  2. Brown meat in oiled skillet.
  3. Add all ingredients to the slow cooker. Cover and cook (8-9 hours)
  4. Serve with rice, couscous, pasta or root vegetable puree.
  5. Add steamed green leafy vegetables (bokchoy, rapini, collard, etc.)
