Grilled Summer Squash Serves 4
This squash (courgette/zucchini - yel/grn) is wonderful in any season. It can be served with Cauliflower & Millet Puree or Polenta.
Ingredients:
4 Medium Summer Squash - thickly sliced (1/2 inch)
Olive Oil
Curry Powder
Salt
Preparation:
Oil a large baking sheet.
Place slices of squash flat on the baking sheet.
Drizzle with olive oil.
Sprinkle salt and a pinch of curry powder on each slice.
