Leco - Vegetables & Eggs - Slovak Style Serves 4
This recipe is a wonderful way to cook summer vegetables and makes a light dish. It is served with potatoes, rice couscous or just a slice of fresh bread.
Ingredients:
Oil
1 Onion chopped
1 Sml Summer Squash or Lrg Zucchini
3 Bell Peppers
5 Tomatoes
4 Eggs
Fresh Herbs (Basil)
Salt
Preparation:
Blanch the tomatoes for 1min and peel.
Cut the tomatoes in half and squeeze out the seeds; chop coarsely.
Saute onions and salt in a large pot until golden (3-5min).
Peel squash, cube and add to the pot.
Seed and chop the peppers and add to the pot.
Add chopped tomatoes and cook (30mins- 1hr) until all juice has evaporated.
Add eggs and cook like scrambled eggs for a few minutes.
