Coconut Curry Chicken & Peaches Serves 2-4
This luscious recipe is the most amazing coconut curry dish. The balance of creamy coconut milk, tomatoes, crunch peaches, curry spices and chicken - makes it almost sinful!
Ingredients
2 Lbs Bone/Skin-less Chicken Breast (or 4-6 Chicken Legs, bone/skin-less) cut in large chunks
Flour
1/2 Cup Butter
1 Tbsp Green Curry Paste
400ml (13.5oz) Can Coconut Milk
1 Tbsp Dry Curry Mixture
1/2 Tsp Cinnamon
1 Garlic Clove chopped
1 Cup Tomatoes chopped
1/2 Cup White Wine
1/2 Cup chicken Broth or Water
1 Tsp Sugar (Pref. Brown)
4 Large Peaches sliced
Parsley chopped
Preparation
Dredge chicken in flour.
Melt butter in woke or large saucepan.
Saute chicken - briefly.
Remove chicken - set aside.
Saute green curry paste (1min).
Pour coconut milk over the green curry paste and bring to a boil.
