Coconut Curry Chicken & Peaches              Serves 2-4

Coconut Curry Chicken & Peaches

This luscious recipe is the most amazing coconut curry dish. The balance of creamy coconut milk, tomatoes, crunch peaches, curry spices and chicken - makes it almost sinful!

Ingredients

  • 2 Lbs Bone/Skin-less Chicken Breast (or 4-6 Chicken Legs, bone/skin-less) cut in large chunks
  • Flour
  • 1/2 Cup Butter
  • 1 Tbsp Green Curry Paste
  • 400ml (13.5oz) Can Coconut Milk
  • 1 Tbsp Dry Curry Mixture
  • 1/2 Tsp Cinnamon
  • 1 Garlic Clove chopped
  • 1 Cup Tomatoes chopped
  • 1/2 Cup White Wine
  • 1/2 Cup chicken Broth or Water
  • 1 Tsp Sugar (Pref. Brown)
  • 4 Large Peaches sliced
  • Parsley chopped

Preparation

  1. Dredge chicken in flour.
  2. Melt butter in woke or large saucepan.
  3. Saute chicken - briefly.
  4. Remove chicken - set aside.
  5. Saute green curry paste (1min).
  6. Pour coconut milk over the green curry paste and bring to a boil.
  7. Add dry curry spice, cinnamon, garlic, tomatoes, wine, broth & sugar - simmer 5mins.
  8. Add chicken meat and simmer for an additional 5-10mins.
  9. Turn off heat, add peaches & parsley.
  10. Serve with jasmine rice or coucous.
