Tomato & Bread Salad (Panzanella) Serves 4
You can use day old bread and vary the ingredients for this very tasty salad. The more seasonal tomatoes you get, the better the salad tastes!
Ingredients
1/2 Cup Olive Oil
1/4 Cup Red Wine Vinegar
3 Tsp Dijon Mustard
2 Garlic Cloves minced
Salt
5 Slices Bread (Pref. Whole Wheat German Style)
3 Lrg Tomatoes
3-4 Tbsp Basil or Parley shredded
2 Tbsp Chives or Onions (optional) chopped
Olives (optional) sliced
2 Sml Cucumbers (optional) sliced
Preparation
Mix oil, vinegar, mustard, garlic & salt.
Cube bread, put into a salad bowl and pour dressing over - stir.
