Pinto Bean Dip or Dressing
This dip or dressing does not require any oil! This is great news, especially when you want to lose some weight. Even if you do not - it tastes great.
Ingredients
1 Cup Pinto Beans (dry), rinsed & soaked for 2 Hrs.
10 Cups Water
1 Bay Leaf
4-6 Tbsp Dijon Mustard
4 Tbsp Apple Cider Vinegar
1 Sml Onion finely chopped
2 Tbsp Dry Tarragon
4 Tbsp Parsley chopped
Salt & Pepper
Preparation
Drain beans & simmer in saucepan with water and bay leaf (do not use salt), for 1-2 Hrs (until very soft).
Discard bay leaf & drain beans. Save cooking water for dressing.
Blend beans, mustard, vinegar, onion, tarragon, parsley, salt & pepper - until smooth.
If you prefer a dressing consistency - add some cooking water to blender until thickness thins.
