Pineapple Coconut Curry                              Serves 2-4

Pineapple Coconut Curry

This is a great way to eat pineapple as a main course!

Ingredients

  • 1 Med Pineapple cubed
  • 1 Tbsp Oil (Pref. Coconut)
  • (2) 400ml (13.5oz) Cans Coconut Milk
  • 1 Tbsp Green Curry Paste
  • 2 Stalks Lemongrass chopped
  • 1 Garlic Clove chopped
  • Peel - 1 Lemon ground
  • 1 Tsp Brown Sugar
  • 1 Tbsp Soya Sauce
  • Salt
  • 4 White Mushrooms chopped (or 1/4 Cup Chinese Dry Mushrooms)
  • 1 Grn/Red Pepper chopped
  • 1/4 Cup Lemon/Lime Juice
  • 3 Tbsp Chives/Grn Onion chopped
  • 2 Tbsp Dried Cranberries (optional)

Preparation

  1. Clean and chop all ingredients & open cans of coconut milk.
  2. Heat oil in a wok or a large saucepan.
  3. Saute curry paste for 1min.
  4. Add coconut milk and bring to a boil.
  5. Add lemongrass, garlic, lemon peel, sugar, soya sauce, salt & mushrooms - simmer 5mins.
  6. Add pineapple & pepper - simmer 3-5mins.
  7. Off heat - add lemon juice, chives/onion and cranberries.
  8. Serve with jasmine rice or couscous.
