Beef Stew Hunter Style                                     Serves 4

Beef Stew Hunter Style

Very delicious and easy to prepare. The longer it is cooked the better the taste!

Ingredients

  • 3 Lb Stewing Beef (some bones)
  • Oil
  • 1 Sml Onion chopped
  • 1 Garlic Clove
  • Salt & Pepper
  • 1 Carrot chopped
  • 1 Parsnip chopped
  • 1 Sml Celerian/Turnip chopped
  • Peel of 1 Lemon
  • 1 Tsp Ground Allspice
  • 1 Bay Leaf
  • 1 Cup Red Wine
  • 1/2 Cup Water/Broth
  • 1/8 Cup Balsamic Vinegar
  • Juice of 1/2 a Lemon
  • 2 Tbsp Rosehip Jam

Preparation

  1. Put oil in a heavy pot.
  2. Add onion, garlic, salt & pepper - saute for 10mins (covered).
  3. Add meat - saute 10mins.
  4. Add lemon peel, allspice, bay leaf, red wine, broth/water, vinegar - cook covered for 2-3 Hrs.
  5. Off heat - add lemon juice & rosehip jam.
  6. Serve with rice, couscous, pasta or mashed vegetables.
  7. Add steamed green leafy vegetables (bok choy, rapini, collard greens, etc.)

White Wine Suggestion


This dish is great with all full body wines. The Lammershoek Pinotage is especially well balanced. It goes well with beef, venison or any game.
