Beef Stew Hunter Style Serves 4
Very delicious and easy to prepare. The longer it is cooked the better the taste!
Ingredients
3 Lb Stewing Beef (some bones)
Oil
1 Sml Onion chopped
1 Garlic Clove
Salt & Pepper
1 Carrot chopped
1 Parsnip chopped
1 Sml Celerian/Turnip chopped
Peel of 1 Lemon
1 Tsp Ground Allspice
1 Bay Leaf
1 Cup Red Wine
1/2 Cup Water/Broth
1/8 Cup Balsamic Vinegar
Juice of 1/2 a Lemon
2 Tbsp Rosehip Jam
Preparation
Put oil in a heavy pot.
Add onion, garlic, salt & pepper - saute for 10mins (covered).
Add meat - saute 10mins.
Add lemon peel, allspice, bay leaf, red wine, broth/water, vinegar - cook covered for 2-3 Hrs.
Off heat - add lemon juice & rosehip jam.
Serve with rice, couscous, pasta or mashed vegetables.
