Pork & Peaches with Wine                             Serves 4

Pork & Peaches with Wine

This is a decadent way to eat peaches. You will love this recipe especially ifyou like unusual food combinations!

Ingredients

  • 2 Lbs Porkloin sliced and tenderized (4 slices)
  • Salt
  • Dry Coriander
  • 7 Tbsp Butter
  • 1 Cup White Wine
  • 2 Tbsp Frozen Orange Juice Concentrate
  • 1 Tsp Brown Sugar
  • 2 Lbs Peaches sliced
  • 2 Lemon or Lime juiced
  • 3 Tbsp Fresh Coriander chopped or Chives

Preparation

  1. Preheat oven to 375 degrees.
  2. Season pork with salt and ground coriander.
  3. Gently heat butter in sauce pan.
  4. Sautre pork slices on each sie (2 mins).
  5. Put pork into a baking dish with tight lid - bake 1/2 hour.
  6. Add wine to the sauce pan bring to a simmer.
  7. Add orange concentrate and sugar - simmer until dissolved.
  8. Add peaches and continue simmering for 10 mins or until peaches are slightly soft.
  9. Off heat - add lemon juice and fresh coriander/chives.
  10. Serve the pork with couscous and peaches.

White Wine Suggestion


This dish requires a slightly sweet and light white wine. Alternately you could serve it with Champagne or Sparkling wine.
