Salmon with Orange/Watercress Sauce Serves 4
Serve this delicious salmon recipe with stir-fried vegetables!
Ingredients
4 Salmon Steaks/Filets
Butter
1 Bunch Watercress
2 Tbsp Frozen OJ (Concentrate)
1 Lemon juiced
1 Tsp Cornstarch
250ml Whipping Cream (35%)
Salt & Pepper
Preparation
Butter roasting dish - place fish in it with 1 tsp of butter on each piece - sprinkle with salt & pepper.
Roast in the oven at 370 degrees for 10-20mins (depending on how rare or well-done you prefer).
Wash/Dry watercress - puree with orange juice, cornstarch, salt & pepper (blender or food processor).
Transfer to a sauce pan - stir over low heat until it thickens.
Add lemon juice and adjust salt & pepper.
This dish is well balanced with a buttery Chardonay. Assorted Californian varieties work as well. Serve salmon with sauce and stir fried vegetables.
