Potato & Cheese Soup                                     Serves 4

Potato & Cheese Soup

Ingredients

  • 2 C Potatoes diced
  • 1 C Onion chopped
  • 1/2 C Celery diced
  • 2.5 C Boiling Water
  • 2.5 Tsp Salt
  • 1/4 C Butter or Margarine
  • 1/4 C Flour
  • 1/4 Tsp Pepper
  • 1/2 Tsp Mustard
  • 1.5 Tsp Steak Sauce
  • 2 C Milk
  • 8 oz Sharp Cheddar Cheese grated
  • 1 Tsp Parsley

Preparation

  1. Combine flour/butter milk until lump free and thickened - then add the cheese until melted. Set aside.
  2. The remaining ingredients - cook in a large stock pot on High heat for 10 mins - reduce to simmer for 90 minutes.
  3. Add cheese/milk/flour mixture and continue on simmer for another 30mins.
  4. Garnish with chopped parsley.
