Potato & Cheese Soup Serves 4

Ingredients
2 C Potatoes diced
1 C Onion chopped
1/2 C Celery diced
2.5 C Boiling Water
2.5 Tsp Salt
1/4 C Butter or Margarine
1/4 C Flour
1/4 Tsp Pepper
1/2 Tsp Mustard
1.5 Tsp Steak Sauce
2 C Milk
8 oz Sharp Cheddar Cheese grated
1 Tsp Parsley
Preparation
Combine flour/butter milk until lump free and thickened - then add the cheese until melted. Set aside.
The remaining ingredients - cook in a large stock pot on High heat for 10 mins - reduce to simmer for 90 minutes.
Add cheese/milk/flour mixture and continue on simmer for another 30mins.
