Bishop Bread                                                     Serves 4

Bishop Bread

This was my favourite cake when I was a child. My grandmother in Slovakia used to make it and it was always very special for us. It resembles Christmas pudding however I use much less sugar and let the various flavours come alive. I also use the best ingredients cut into big chunks. Enjoy!

Ingredients

  • 3/4 C Raisins soaked
  • 16 pieces dried Apricots soaked and cut in half.
  • 60g Dark Chocolate (preferably Lindt 70% cocoa broken into big pieces)
  • 1/2 C Almonds - toasted & halved
  • 1/3 C crystallized ginger cut into big chunks
  • 1/3 C Dried Cranberries (optional)
  • 5 Eggs
  • 2 Tbsp Brown Sugar
  • 1 Lemon - peel & juice
  • 1/2 Bread Flour

Preparation

  1. Grease and flour 9”x5” loaf pan.
  2. Separate egg yolks and whites.
  3. Whip egg whites until stiff.
  4. Mix egg yolks, sugar, lemon juice & peel - until the sugar is dissolved.
  5. Add flour and mix well.
  6. Add all dried fruit, chocolate and almonds - mix well.
  7. Carefully fold in egg whites.
  8. Pour into the loaf pan and bake at 350 degrees for 45-60 minutes.
  9. Let cool for 1 hr and serve. It is especially delicious eaten warm.
