Truffles                                        

Truffles

These truffles are the ultimate indulgence. The dark rich chocolate and the spicy ginger, are a perfect end to a romantic meal or special occasion.  For a better result use the best dark chocolate you can find like Lindt Ecuador or 70% cocoa blends.

Ingredients

  • 1/2 C Whipping Cream 35%
  • 375g Bittersweet Chocolate - broken into pieces
  • 1/4 C Brandy or Liquor
  • 1/2 C Candied Ginger - chopped
  • Cocoa Powder

Preparation

  1. Prepare a tray for truffles to be refrigerated.
  2. Put cocoa on a plate.
  3. In a small heavy saucepan, bring cream to boil.
  4. Remove from heat and mix in chocolate until smooth.
  5. Stir in ginger and brandy.
  6. Cool slightly to be able to form balls.
  7. Form ball then roll in cocoa and put on the prepared tray.
  8. Refrigerate (up to 2 weeks).
  9. 1 hour before serving take out of the refrigerator to serve the truffles slightly soft.
