Salmon with Avocado/Wasabi Cream Serves 4
The avocado wasabi cream has a satiny texture with a hint of spiciness! The lemon compliments the salmon wonderfully.
Ingredients:
4 Salmon Steaks/Filets
4Tsp Wasabi dry
3Tsp Water
1 Avocado ripe
4Tbsp Lime Juice
1/4C Mayonnaise
Butter
Salt & Pepper
Preparation:
Put Wasabi into a small cup - add water and mix well. Turn cup upside down and wait 1min for maximum heat to develop.
Halve the avocado, remove pit and scoop flesh into a bowl.
Add prepared wasabi, lime juice, mayonnaise, salt & pepper. (Add more lime if required - be careful not to overpower the creamy avocado flavour)
Butter roasting dish for salmon. Put in salmon steaks/filets.
Add salt & pepper. Place 1 Tsp of butter on each piece.
Roast in oven at 370 degrees for 10-20mins - depending on how rare or well-done you prefer.
The creamy and lemony taste of this recipe balances well with dry Sauvignon Blanc.
