Herbed Mustard Chicken                                 Serves 4

Herbed Mustard Chicken

I feel like chicken tonight but it must be noted that this recipe you can substitute the chicken for pork or veal.  Here is another great recipe that takes the ever popular chicken breast and turns it into heaven. The tangy and spicy herb/mustard dressing is the perfect pairing with the zesty orange flavours that you’ll taste. Enjoy!

Ingredients

  • 3 Tbsp Butter unsalted
  • 4-6 Chicken Breasts skinless
  • 1 Tbsp Dijon Mustard
  • 1 Orange juiced
  • 1/4 Tsp Rosemary dried

Preparation

  1. Melt butter in a large frying pan. Add the chicken breasts and saute over medium heat - 2mins per side.
  2. Push to one side - whisk in the mustard and orange juice - finely crush the rosemary and add.
  3. Cover, reduce heat to low and simmer for 7mins - until meat is done as you like, turning once.
  4. Remove the meat and, if necessary, boil the sauce vigorously until thickened enough to coat the meat - approx. 3mins.
  5. Pour any juices that may have run from the meat into this sauce and add salt & pepper as needed. Pour sauce over meat.
