Traditional Turkey & Stuffing                      Serves 6-8

Traditional Turkey & Stuffing

In having a turkey with stuffing recipe we decided to keep it simple and of course delicious. Why mess with perfection - it’ll turn out smelling and tasting like every great holiday you remember! Hopefully without being too dry....... right Grandma?

Ingredients

  • 8 Lb Turkey (ready to roast)
  • 5-6 C Bread Crumbs
  • 1 Onion Med. - chopped
  • 1/2 C Mushrooms - sliced
  • 3 Tbsp Parsley - chopped
  • 1/2 C Carrots - coarsely grated
  • 1.5 Tbsp Butter
  • 1 Tsp Salt
  • 1/3 Tsp Pepper
  • 1 Tbsp Thyme/Sage - poultry seasoning

Preparation

  1. Saute onions in a pan with oil until golden - add mushrooms and saute until they are soft.
  2. Mix all stuffing ingredients thoroughly.
  3. Stuff the turkey and close the openings with cotton twine or large roasting skewers.
  4. Place the stuffed turkey in a roasting plan and put in a 400F oven - 30mins.
  5. Brush the giblets with oil and place them around the bird.
  6. Roast for 2.5 hours more, basting often.
  7. When the pan drippings have caramelized, add 2 Tbsp of water and repeats as often as necessary to avoid burning.
  8. Let turkey rest for 20-30mins after cooking - cover with a sheet of foil.
  9. Strain the gravy and let it sit for 5mins for the fats to rise - skim off and discard.
  10. Season the gravy with salt and pepper.
  11. Serve with Root Vegetable Puree.
