Veal Stew with Cranberries                             Serves 4

Veal Stew with Cranberries

If you’re dressed to impress this is the recipe to show off your cooking skills! Bursting with creamy and delicious flavours that will dazzle any guest. Serve it alongside our Simple Couscous Salad an easy side dish to 10mins before serving your meal.

Ingredients

  • 2.5 Lbs Veal Shanks or other Veal cuts (bone-in)
  • Oil
  • 1/2C Flour
  • 1 Sml. Onion - chopped
  • 1 Garlic Clove
  • Salt & Pepper
  • 2 Carrots - chopped
  • 1 Parsnip - chopped
  • 1 Sml. Celerian or Turnip - chopped
  • Peel of 1/2 Lemon - grated
  • 1 Tsp Hot Paprika
  • 2 Tbsp Ginger - grated
  • 1 C Red Wine
  • 2 C Water/Broth
  • 2 C Cranberries
  • 1 Med. Apple - chopped

Preparation

  1. Combine veal with flour - shake off excess flour.
  2. Brown meat in oil (if you use a crockpot - do this in a separate skillet).
  3. When meat is browned add all ingredients (but the apple) into a large pot/crockpot.
  4. Cover and cook on low for 3 hours.
  5. Add apple at the end.
  6. Serve with Simple Couscous Salad.
