Navy Bean Soup                                               Serves 4

Navy Bean Soup

This style of soup is found the world-over. This variation hails from Eastern Europe. It’s the soup that most people find they associate with warm memories of home.  When something wet and warm is all that will do and you’re sick and tired of chicken noodle!

Ingredients

  • 1 C Navy Beans - soaked overnight
  • 7 C Water
  • 1 Bay Leaf
  • 2 Carrots - sliced
  • 1 Parsnip/Turnip - chopped
  • 1/4 Celerian or 2 Celery Stalks - chopped
  • 3 Tsp Hungarian Paprika
  • 1 Tbsp Flour
  • 1 Lb Spicy Paprika Sausage (Portuguese/Chorizo) - sliced
  • Salt
  • 1/4 Lb (100g) Fettuccine Pasta
  • Parsley - chopped (optional)

Preparation

  1. Drain beans - put into a large saucepan.
  2. Cook beans, bay leaf and water (no salt!) for 1/2-1hr or until the beans are very soft.
  3. Mash beans slightly to give the soup a slightly creamy consistency.
  4. Add carrots, parsnip, celerian/celery, parprika, flour, sausage, salt - cook for 1/2hr.
  5. Add fetuccine and cook until soft.
  6. Garnish with chopped parsley and bread.
