Indonesian Vegetable Medley                        Serves 4-6

I love oriental stir fries and curries. They are versatile, tasty and preparation is a snap. As well this recipe has a lot of space for creativity - vegetable substitutions are easy. The trick is to have all the vegetables cleaned/cut and have all the spices lined up in advance.  This way you’ll end up with a meal that is crunchy as well as delicious.  You can prepare this dish substituting chicken or shrimp for the tofu. Serve with rice, plain potatoes or couscous.

Ingredients

  • 1/4 C Cashew Nuts
  • 1.5 C Coconut Milk
  • 1 C Water
  • 1 Tbsp Turmeric Powder
  • 1 Tbsp Ground Coriander
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Oil
  • 1 Lrg Onion - chopped
  • 4 Garlic Cloves - chopped
  • 2 Med. Carrots - chopped
  • 1 Red Pepper - chopped
  • 1 C Broccoli - florets
  • 1.5 C Cabbage - thinly sliced
  • 1 C Tofu - chopped
  • Salt

Preparation

  1. Liquify cashews, coconut milk, water, turmeric, coriander and soy sauce.
  2. Heat oil in wok - saute onions and garlic until translucent (3-5mins).
  3. Add carrots and saute for 2mins.
  4. Add remaining vegetables and saute for 2mins.
  5. Add cashew/coconut mixture and bring to a boil.
  6. Simmer 5-10mins - making sure that the vegetables stay crunchy.
  7. Adjust seasoning and serve.
