Sauerkraut Soup with Sausage & Lentils Serves 6-8 (Kapustnica)
This hearty soup is a traditional Christmas soup in Slovakia. Try it and you will be amazed at how great it tastes. The soup is thick and can be a main course if served along with a fresh grain loaf of bread.
Ingredients
1/2 C Lentils (Soak 2-4 Hrs)
6 C Water
1 Bay Leaf
4 C Sauerkraut
1 Carrot - sliced
2 Portobello Mushrooms
1 Lb Spicy Paprika Sausage (Portuguese or Chorizo) - sliced
6 Tbsp Oil
1 Onion - chopped
2 Tbsp Hungarian Paprika
4 Tbsp Flour
Salt & Pepper
Preparation
Drain lentils - put in pot with water and bay leaf - bring to a boil - simmer for 30mins.
Add sauerkraut (with juice), carrot, mushrooms and sausage - gently boil for 30-40mins.
In a small, separate saucepan heat oil and saute onion until translucent.
Slowly add flour stirring to prevent lumps.
When the flour is medium brown - slowly add 2 ups of water stirring continuously to prevent lumps.
Add this mixture to the lentils and sauerkraut - add paprika.
Gently boil for another 15-30mins.
Serve with Bread.
