Grilled Vegetables with Green Mayonaise      Serves 4

Grilled Vegetables with Green Mayonaise

Grilling is a popular way to prepare meals in the summer. We move the heat from the kitchen to outdoors and many times delegate the chef’s responsibilities to our men. They know how to play with fire! I know they prefer to prepare meat, let them grill vegetables at the same time.  In between you can prepare the green mayo - just make sure that the mayo is put on the plate first and the vegetables on top. This dish has a lot of taste on its’ own and also works well with very simple burgers, poultry or even mild fish.

Ingredients

  • 1 Garlic Clove - chopped
  • 200g Watercress or Flatleaf Parsley
  • 1 Tbsp Dry Tarragon
  • 1/2 C Mayonaise
  • 2 Tbsp Butter - melted
  • 1 Lemon - juiced
  • Salt
  • Vegetables for 4 (Sml Potatoes, Zucchini, Eggplant, Peppers)
  • Vegetable Oil

Preparation

  1. In a blender/food processor combine the garlic, watercress/parsley, and tarragon until finely chopped.
  2. Slowly add the mayonaise while machine is running.
  3. When well mixed add the butter - then add the lemon juice.
  4. Season with salt and chill.
  5. Slice vegetables and brush them with oil and salt.
  6. Grill until slightly brown on all sides - serve with green sauce on the bottom and vegetables piled on top.
