This recipe is our family classic. The only thing that is required is patience. It does take some time to prepare but not a lot of involvement. The result is fantastic, luxuriously rich, smooth, and flavourful. This ratatouille is the best way to prepare vegetables to ensure second helpings! You can add other vegetables like summer squash, or zucchini. Serve with rice, potatoes, couscous or just bread. You could also use ratatouille as a side dish with meat.
