Apple-Pear Crisp with Cranberries                Serves 6

Apple-Pear Crisp with Cranberries

This is one of those scrumptious desserts that everyone loves.  The wonderful combination of the tart fruit, a sweet crust and crunchy almonds, immediately starts my mouth watering...  We’re repeatedly asked by guests for this recipe and I make them promise to only use the Yoghurt topping before I’ll give it to them. Another trick is to make extra because this is a fun way to eat breakfast in bed on a lazy Saturday morning..

Ingredients

Crisp:

  • 1 C Cranberries (Fresh/Frozen)
  • 1/3 C Peach Schnapps
  • 1/2 C Roasted Almonds - chopped (Sub. Peacans/Walnuts)
  • 1 C Rolled Oats - quick cooking
  • 1 C Spelt or Whole Wheat Flour
  • 1/4 C Brown Sugar
  • 1 Nutmeg - ground
  • 8 Tbsp Cold Butter
  • 1 Lime or Lemon - zested (5-6 Tbsp)
  • 1 Lime or Lemon - juiced (5 Tbsp)
  • 3 Apples/Pears - cored (try: 2 apples and 1 pear)

Yoghurt Topping:

  • 375g Natural Yoghurt
  • Stir in 5-6 Tbsp of Dark Maple Syrup
  • Stir in 1 Tbsp of Vanilla Extract

Preparation

  1. Preheat oven to 375 Celsius (190 Farenheit) - Butter a 9”x 9” (2 Quart or 2-L) baking dish.
  2. Place cranberries in a bowl and toss with the peach schnapps (let them marinade while you prepare the remainder of the ingredients).
  3. Mix together the rolled oats, flour, brown sugar and nutmeg.
  4. Cut in the butter thoroughly until the mixture is crumbly and slightly moist.
  5. Stir in the toasted almonds and lime/lemon zest.
  6. Slice the apples and/or pears - layer on the bottom of the baking dish - pour lemon/lime juice over the top.
  7. Layer the cranberries over the top of the fruit.
  8. Pour the peach schnapps marinade into the crumble mixture and stir.
  9. Spread the crumble mixture evening, over the fruit - be sure to cover the fruit completely.
  10. Bake in the oven for 45mins (regular oven) or 60mins (convection oven).
  11. To finish browning the top, place the baked crisp under the oven broiler for 2-3mins, watching closely to be sure it doesn’t burn.
  12. Serve warm with the yoghurt topping.
