Wine Agent Neil FortesYou like one glass of wine with your dinner. Or you have friends over and you open a new bottle of wine at the end of the evening. There is wine left in the bottle. What to do with it? You would like to keep it fresh to enjoy a glass tomorrow or the day after tomorrow.

We have seen all kinds of methods. Pouring wine into small bottles, vacuuming air out of bottle, or just simply putting it into the fridge as is. Some methods are better than others such as pouring wine into a small bottle where there is very little air left. The trick is to find the right small bottle.

A new product is available on the market for those of us who want to have 1 glass of wine. And to have another one tomorrow or even a few days later tasting as fresh as if the bottle was just opened.

The product is called Private Preserve. It is a wine preserve – a gas that is sprayed into a bottle or a decanter. The idea is similar to one from the ancient world which was to pour oil on the surface of wine. This is not oil but an environmentally friendly inert gas that is safe. The gas is heavier than air and sits on the top of the wine preventing it from oxygenation. It keeps an open bottle fresh for 3-7 days. It costs $15.95 and lasts up to 120 uses.

This is a great holiday gift that you can give to those people who like a nice glass of wine with their dinner. And have some great wine left in the bottle for other night. Wine Agent Neil FortesSome people suffer headaches when they drink wine, especially red wine.

Why does this happen? We asked wine expert and agent Neil Fortes. The explanation is simple. It is sulphur that causes the headache. Most grapes are sprayed with sulphur to prevent mould forming. Some of the sulphur stays on the skin of the grapes and get into the wine. The skin is left with the juice during the fermentation process to achieve the beautiful red colour and tannin taste. White wines are made without using the grape skin. That is why many people can drink white but not red.

And what is the solution for the people who have difficulty with red wines?

Some lucky wine areas have just enough rain and plenty of sun and wind to dry the grapes. Then sulphur does not have to be used to prevent mould forming. Many organic wines are grown in such areas with plenty of sun and wind. Some wines are also organically made. These wines are the best solution for those of us who love red wine but get headaches when we drink it. Neil recommends a red South African wine “Out of Africa”, an organic Shiraz. This wine is organically grown, organically made and packaged in a tetra pack. Some of us are still attached to the traditional glass bottles but this wine is worth tasting. Just open the package and pour it into a decanter and enjoy. And the price is great - $13.15 for 1 litre of organic wine!
